With so many real photos of my own, I looked through my archive and realised that the one type of photo that is always difficult to capture is of <i>melting </i>or <i>dripping</i> ice cream. To me, the idea of scoops of ice cream topped with sauce all melting together down the side of a cone is a simply delicious prospect! Check it out courtesy of Quora.<br /></p><p></p><p>Directly the children had been handed a cone each they became animated with smiles of joy and excitement and I immediately recalled the same feeling from my childhood days. Delicious! </p><p></p><p>Whilst deciding whether or not we should treat ourselves to a delicious cone, an elderly couple presented themselves next at the ice cream van counter. Again, smiles all round when they received their ice creams. This time it wasn't ice cream cones - they had chosen an ice cream tub each, one with what looked like chocolate ice cream and the other with strawberry. That was it, we were next! What did we have? Not a cone, not a tub but a chocolate ice cream sundae!</p><h3 style="text-align: left;">Ice Cream Music</h3><p>So why should this ice cream experience be worth writing about? How To Make Your Ice Cream</h3>
<ul>
<li>First, chill the custard well before you start, so put it in the refrigerator for at least 1 hour.</li>
<li>Mash the banana in a bowl using a fork OR blend it in a food processor.</li>
<li>Stir the peanut butter into the banana puree.</li>
<li>Pour the chilled custard on top and mix in gently.</li>
<li>Pour the mixture into your electric ice cream maker and freeze according to the manufacturer's instructions.</li>

The crop actually generates well over half a billion dollars per year as income for the state of Georgia. The above ideas are all ways of having fun with ice cream. FANTASY is another thing entirely. Today, I can share with you what appears to be a world first - a medieval ice cream recipe!<br />
Basically, it's an ice cream which uses ingredients that they had in medieval times. Not exactly rocket science you might think BUT there is a great, imaginative story that accompanies this recipe. It even includes some actual medieval history.<br />

I asked readers to guess the ice cream flavours. Oh what fun it was! The response to the post was amazing and people made all kinds of suggestions. Some guesses were very close and a few were a little .. er ... let's say 'imaginative' :) <br />

One ice cream enthusiast suggested beetroot and onions! Another, bacon and chicken! After 5 days of guessing, it was Louise McInnes from Scotland who got it right. Her first post guessed Red Velvet for the top scoop and her second post guessed White Chocolate for the bottom scoop. She was spot on!<br />

Red Velvet Cake Ice Cream Recipe</h3>
NOTE: My recipe is for a rich and creamy ice cream with crumbled real Red Velvet cake added. The recipe is very similar to my <a href="https://www.ice-cream-recipes.com/ice_cream_recipe_christmas_pudding.htm" target="_blank">Christmas Pudding ice cream</a>.<br />
<br />
<u>Step 1 - Make a rich custard base using:</u><br />
1/2 pint (250ml) chilled whole milk<br />
4 egg yolks <br />
4 oz (100g) sugar or caster sugar<br />
<ul>
<li>Heat the milk slowly in a saucepan. Bring it up to boiling point but do not boil.</li>
<li>In a separate bowl, mix the egg yolks with the sugar. Beat until smooth then pour the hot milk into it and stir it well. Pour the
mixture into the saucepan and heat it gently. </li>
<li>Keep stirring whilst it slowly heats up and thickens. When it looks and feels like custard take the pan off the heat and leave it to cool down. This will take 1-2 hours. Chill in the refrigerator for 2-3 hours or overnight. </li>
</ul>
<u>Step 2 - When the custard is chilled, add the remaining ingredients:</u><br />
1/2 pint (250ml) chilled, double/heavy cream<br />
8 oz (200g) Red Velvet cake (crumbled and chilled) <br />
<ul>
<li> Stir the double/heavy cream into the chilled custard base. </li>
<li>Add the crumbled Red Velvet cake, gently stirring it in well. </li>
<li>Transfer the mixture into your ice cream maker and freeze according to the
manufacturer's instructions. </li>

I was on holiday recently and decided to try a new ice cream flavor from one of Europe's top commercial ice cream makers. I don't normally do this as I much prefer homemade ice cream but it was a hot day and the combination of ingredients displayed on the advertising board for this new popsicle looked too good to resist.<br />

The ingredients combination was:<br />

<li>Vanilla ice cream</li>
<li>Milk chocolate coating</li>
<li>Maple syrup and chopped walnuts mixed into the chocolate coating</li>

I bit into the popsicle the moment it was handed to me. It tasted surprisingly good for a commercial ice cream. Then it occured to me .... I should take a photograph to share this new flavour with my ice cream blog readers. <br /><br />

Only when I finished eating the ice cream and looked at the photo I had taken did I realise that it was initially hard to detect against the background. The background of the sandy beach with its ridges and shadows was so similar to the popsicle that the ice cream seemed to be in camouflage!<br />

Matching your ice cream to the location</h4>
It may sound a little crazy but you can actually go one step further with all of this. You can even match the colour of your ice cream to your surroundings! I did this recently on a visit to La Flotte on the beautiful <a href="https://www.poitou-charentes-vendee.com/the-ile-de-re/" target="_blank">Île de Ré</a>. It was a beautiful morning with a glorious, bright blue sky. So I bought a bright blue ice cream!<br />

If I had to pick a favourite it would be the pistachio. Its colour, texture and taste was superb. For those of us who live in the <a href="https://en.wikipedia.org/wiki/Western_Hemisphere" target="_blank">western hemisphere</a>, it's the time of year when we get to spend more time outdoors. It could be as simple as a local walk, or more adventurous such as visit to a tourist attraction or even going away on vacation. In all those scenarios, eating ice cream becomes an option and a pleasurable one at that! <br />

I've just been for a walk in the Spring sunshine around a lake not far from my home. No sooner had I parked my car than I spotted the small ice cream counter at the boathouse cafe with a queue forming! The walk could wait a few more minutes I thought :) <br />
<br />
So I waited patiently for my turn and without hesitation chose a mint choc chip ice cream cone. Just one scoop, no sauce, no chocolate flake. At the start of the ice cream eating season you have to build up to such things! It was delicious and not too much of an indulgence to put me off my walk. So I was able to feel indulgent without any guilt! I love this ice cream flavour and, indeed, have my own recipe for <a href="http://www.ice-cream-recipes.com/ice_cream_recipe_mint_choc_chip.htm" target="_blank">homemade mint choc chip ice cream</a>. <br />

This is a great ice cream to serve at home for family or friends. One of my favourite ways of serving it is with fresh fruit and a sprig of fresh mint from my garden, all set in a chocolate waffle basket.<br />

It makes for an interesting and colourful dessert whilst not being too heavy such as a pudding might be. So it's ideal for completing just about any menu.<br />

Note: I chose the sprig of fresh mint because it is a timeless and wonderfully versatile herb. I was reading about it just recently and its history in culinary dishes goes way back. It was popular in medieval times as a salad ingredient along with purslane and even flowers like the primrose. Having a cup of fresh mint tea is another option of course. I love to pick fresh mint from my garden, drop it in a cup and just add boiled water. Letting it steep for 5 minutes produces such a refreshing drink. I love it! <br />

So whether it's ice cream, a salad or a hot drink, fresh mint can be on the menu in your home in many different ways! I have had that experience many times which is why I always try to take a picture whenever I have a special sundae or an unusual ice cream cone.<br />

A search engine like <a href="https://www.google.com/" target="_blank">Google</a> is always looking for 'keywords' and 'relevancy' in a blog post and whilst that is good practice if you want to rank a page, it does not always suit the purpose of what and how you want to describe something to your blog readers. Sometimes words just don't do the subject justice and when it comes to ice cream, I can tell you that that is definitely the case!<br />

This post is a prime example of what I am talking about. My idea for the post was to share with readers some of the most delicious ice creams that I, my family and friends have ever eaten. I am certain that the best way is to share the pictures and use very few words because I want you to use your own imagination about how the flavor and texture of each ice cream in its own right.<br />

Well, the ice cream is not exactly white .... it's more off white! However, it is made with white chocolate as one of the key ingredients.<br />

This is a seriously indulgent rich ice cream. Using eggs, fresh milk and heavy cream as the base, you then add some of your favourite white chocolate and it takes the flavour sensation to another level!<br />
<h3>
How To Make White Chocolate Christmas Ice Cream <b> </b></h3>
First, the ingredients you will need for the recipe:<br />
<br />
4 egg yolks <br />
1/2 pint (250ml) fresh milk <br />
1/2 pint (250ml) double/heavy
cream <br />
3 oz (75g) caster sugar <br />
2 teaspoons vanilla extract (or according
to taste) <br />
9oz (250g) white chocolate<br />
<br />
<b>Method - Get the chocolate ready first!</b><br />
Carefully chop the white chocolate into small chunks. Place into 2 separate but equal portions in 2 small bowls and keep to one side for later.<br />
<br />
<b>Making the custard base and final ice cream in 9 easy steps</b><br />
Step 1 - <br />
Pour the milk into a saucepan. Bring slowly up to the boil. <br />
<br />
Step 2 - While the milk is heating up, in another bowl mix together the egg yolks and sugar - beat until thick. <br />
<br />
Step 3 - Pour the
hot (but not boiled) milk into the mixture of egg yolks and sugar whilst stirring. <br />
<br />
Step 4 - Pour the mixture back into the pan and heat gently, stirring until the
custard thickens. DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE. <br />
<br />
Step 5 - When
you can see a film form over the back of your spoon remove
the pan from the heat. <br />
<br />
Step 6 - Stir in the vanilla extract and half of the chopped white chocolate pieces. <br />
<br />
Step 7 - Keep stirring until all the chocolate
has melted. Leave to cool.
<br />
<br />
Step 8 - When fully cooled, stir
in the cream. <br />
<br />
Step 9 - Transfer the whole mixture into an ice
cream maker and freeze according to the manufacturer's instructions. <br />

Another historic site I once visited in summer was Rocamadour where, halfway up the steep and ancient hill climb of hundreds of steps, I found an ice cream parlor! I couldn't believe the amazing ice cream they sold there - prune gin, goats cheese, saffron and walnut were 4 that I particurlaly remember. All the ice cream was locally made too and the lady at the ice cream counter was only too happy to let me sample as many as I wanted. Such was her pride and delight in sharing her passion for great ice cream.<br />

Some people might head for the nearest store and buy a tub of B&J's or Haagen-Daz. Speaking for myself I would have to be desperate to do that!<br />

Nope, I would look for the nearest ice cream parlor. I'd <a href="https://www.google.com/" target="_blank">Google</a> it on my iphone or ask a local passer-by for a recommendation. This is something I've done a lot over the years. What's more I regularly ask friends to let me know if they discover a great ice cream parlor and send me a photo. <br />

The end result is that not only do I, my family and my friends get to experience great ice cream parlor 'finds' but you also get to share in them - like today!<br />

Above is a seaside ice cream parlor in France. Designed specifically to attract families, the parlor chose to invest in some wonderful ice cream themed furniture and display items. The specially made ice cream cone chairs are brilliant! The big ice cream cone is a clever idea too - not only is it a trash can that entices kids to use it but it enables them to see the parlor from way down the other end of the street!<br />

Above is a parlor that takes a different approach. Again in france, this is a village bakery and coffee shop which also makes its own ice cream. It has a lovely sense of relaxed style with its beautiful small olive tree featured on the decked terrace. So different to the one above but so appropriate in its context.<br />

I've eaten at both these parlors and the ice cream was equally delicious but the latter made a bigger feature of ice cream sundaes with sugared whipped cream and homemade cookies stuck on top! At the other extreme, this next ice cream parlor (below) is not one I've eaten at but it's where my friend Ann loves to take a break in the heat of the day sometimes after shopping. Its Thai decor and refined style make this a haven of peace for those in need of a cooling but delicious refreshment and apparently the quality of the ice cream they serve lives up to all expectations. <br />

When I was a child there was just one type of chocolate ice cream! Maybe that's why I got into ice cream making, because when it's homemade your only limit is your imagination! <br />

Here are some of my favourite recipes for chocolate ice cream that you can make at home. Some have a custard base and others use a combination of heavy cream, milk and sugar.<br />

Chocolate, of course, is not just chocolate - there are many types with different percentages and grades of cacao. Guanaja chocolate for example. Ever heard of <a href="http://en.wikipedia.org/wiki/Guanaja" target="_blank">Guanaja</a>? It's a little island in the Caribbean first discovered by Christopher Columbus more than 500 years ago and it was where he came across cacao for the very first time. The cacao that grows there makes a dark and intense tasting chocolate. What many chocolate experts would call a 'true' chocolate. <br />
<br />
I recently chanced upon a special 'artisan' chocolate ice cream in France made with 80% Guanaja chocolate and ginger. Wow! It was one of the strongest, bitter chocolate ice creams I've ever tasted and the ginger gave it a great extra kick.<br />

The same artisan ice cream maker used 80% Guanaja chocolate to create another unique ice cream flavor, combining it with <a href="http://en.wikipedia.org/wiki/Yuzu" target="_blank">yuzu</a> and lime zest! Again, a very strong and intense flavour with a sharp hint of citrus. The yuzu also gave the ice cream a lovely aroma!<br />

Note: Yuzu is popular in Japan for making marmalade and also it's aromatic oil is used for bathing most traditionally at the Japanese winter solstice (Toji). How's that for a nice extra fruity fact :) <br />

If that texture is too hard or too soft, then it risks being an inferior experience for the people who look forward to eating it.<br />

It doesn't matter whether you are a master ice cream maker with a shopfront or ice cream parlor or if you just <a href="http://www.ice-cream-recipes.com/" target="_blank">make homemade ice cream</a>. The principle is the same. Spoil the texture of ice cream and you spoil the ice cream itself!<br />
<br />
So what are the guidelines for good ice cream storage? Here are a few pointers:<br />

Cold Storage For Homemade Ice Cream</h3>
No strict guidelines here but generally do not store homemade ice cream in your freezer for more than 2 months. <br />
<br />
Personally, I prefer to keep it no longer than 1 month. <br />
<br />
Length of cold storage time also depends upon the type of ice cream you have made. A gelato has a different consistency to a sorbet for example and an ice cream made with a rich cream base and fresh fruit ingredients is different again. <br />
<br />
To be absolutely honest, I think the best homemade ice cream is eaten fresh from the ice cream maker!<br />
<br />
If the ice cream is a little on the soft side when you first make it and you prefer it harder then pop it in the freezer for just 20 minutes or so before serving. <br />
<br />
With homemade ice cream that's been stored in the freezer, I recommend taking it out and put it into the refrigerator for about 10 minutes before serving. Cold Storage For Commercial Ice Cream</h3>
Master ice cream makers tend to have developed their own ice cream recipes over time, to the point where they know exactly the right temperature for storage and the optimum amount of time it can be kept in cold storage. <br />
<br />
Most ice cream parlors have a good cold storage room, which I learned from a friend of mine is sometimes referred to as a <a href="http://www.frimatecuk.com/modular-cold-room-offer/" target="_blank">walk in freezer</a> - ie. a big freezer with tiered shelving (up to about 2m high) and a door that allows a person to go inside and retrieve or inspect what's been stored. <br /><br />Having heard this 'walk in freezer' reference I decided to research it a little more. Just what does this kind of cold storage for ice cream look like? Is it easy to get hold of? Is it complicated to set up? <br /><br />So I trawled a few web pages and came across a <a href="https://plus.google.com/" target="_blank">Google+</a> post made by a chap who claims to have 'spent a lifetime in the freezer!'. His background looked very credible so I followed through a little more. He had referenced an example of what is called modular cold room storage. This type of 'cold room' comes in both fridge (chiller) or freezer format and has the shelving and door that makes it the walk type. Here is a picture .......<br />

What's more it is apparently easy to self-install - as long as you follow correct rules of health and safety practices of course! Don't think I would be tempted to do so but a couple of chaps on site working at an ice cream parlor might be OK with it. That's where the modular bit comes in - the panels that make up the cabinet bascially slot into each other (though I think it's a bit more technical than that!). <br />
<br />
What's also interesting is the wide variety of people who use these walk in cold rooms. Apparently, the food sector as a whole is a big buyer of these rooms from take-aways to burger bars, pizza shops, bakers and butchers. Then on top of that there's the medical market with labs and pharmacies using them lots apparently. <br />

I remembering reading how in Ben and Jerry's first season of running an ice cream parlor in Vermont, they managed to get through their first winter OK (and it can be very wintery in Vermont!) by tempting people to come into their parlor with the slogan "Penny off for Celsius

So back to today and cold, wet weather .... don't you just hunger for something gloriously indulgent? Well, here's my tip for a real treat ...... creamy, rich (and just slightly alcoholic) coffee, rum and walnut ice cream! It's strange but I find that it's nearly always the autumn and winter when I make this ice cream recipe and it's a recipe that I have not modified from day one. It works and tastes great! <br />

Ever heard of <a href="http://www.purpleday.org/" target="_blank">Purple Day</a>? If not, then I'm sure you will want to know more. Purple Day is a worldwide event which takes place every March. Its aim is to raise awareness about <a href="http://en.wikipedia.org/wiki/Epilepsy" target="_blank">epilepsy</a>. People all over the world dress in purple and stage events in support of epilepsy awareness. Apparently, last year there were even participants in Antarctica. <br />
<br />
I think Purple Day is a wonderful idea for 3 reasons:<br />

1. Epilepsy is currently one of the least understood illnesses in the world. As far the general public is concerned, most people have no or little idea of what it is and how it affects those who suffer from it. With a greater openness and awareness hopefully there will be a better understanding, less stigma and greater compassion and support.<br />

2. Fundraising is much needed to support the help and advice which the various epilepsy charities around the world so readily give to people. Here are some of the charities' websites: </div>

Recently my Mother shared with me the lovely news that my cousin Gillian's son Mark and his wife Emma had been blessed with the birth of a beautiful daughter Isobel Gillian.<br /><br />My cousin Gillian passed away sadly not very long ago but I know she would have been thrilled at the birth of a grand-daughter.<br />

So is there an ice cream connection in this story? Well, yes actually, there are 2 ice cream connections and I would like to share them with you today.<br /><br />First of all, I have had a lifelong passion for ice cream with many happy childhood memories related to enjoying ice cream. As a child I spent many happy hours playing with my cousins Terry, Janette, Glyn, Allan and Gillian. My cousin Gillian was the eldest amongst us and she would invariably be charged with ensuring we didn't get into too much mischief. Occasionally an ice cream van would come along when we were out playing and we would rush into whichever cousin's house was nearest to see if we could persuade an aunt or uncle into allowing us an ice cream treat. We had the occasional success but invariably it was too close to tea-time for us to be allowed an ice cream on the basis it would ruin our dinner. Try telling that to a 8-12 year old group of cousins and getting them to believe you! Occasionally, however, our families would go together on a day trip to the seaside (usually Scarborough or Bridlington in <a href="http://www.yorkshire.com/" target="_blank">Yorkshire</a>) and this was the most likely bet for us all to get an ice cream treat. Oh how we enjoyed those ice cream cones - happy days :) <br /><br />Secondly, my cousin Gillian's sister Iris once knitted me a wonderful white polar bear holding an <a href="http://www.ice-cream-recipes.com/cones.htm" target="_blank">ice cream cone</a>. She's called Paula Bear and sits beside my desk in my study watching me write my blog. <br /> <br />

Hence your freezer, if it's working correctly, can be your best friend. <br />

Most household freezers can accommodate your general frozen foods such as bread, fish, meat and a few ready-made meals whilst still having a little space left for a couple of tubs of ice cream. But what if you want more than a couple of tubs in storage? What if you're planning on giving a party where ice cream is on the menu? Or you might be planning to make some ice cream sculptures which can sometimes require several tubs of different ice cream colors (red = strawberry, brown = chocolate etc). <br />

Then again, you and your family might simply have different preferences when it comes to ice cream flavors - vanilla for Mum, mint choc chip for Dad, <a href="http://www.ice-cream-recipes.com/ice_cream_recipe_banana.htm" target="_blank">banana ice cream</a> for the kids, etc - so you need to keep several tubs in storage for whenever they fancy a quick, tasty dessert. <br />
<br />
So what do you do? Empty the normal food from the freezer and stock up just on ice cream? Nope, whilst it might be tempting it's a tad too radical a step! The best option is to consider buying a small <a href="http://www.ice-cream-recipes.com/ice_cream_freezer.htm" target="_blank">ice cream freezer</a> that you keep solely for ice cream storage. It's something I've been thinking of for a while but have yet to get around to doing - maybe because it would tempt me to have more ice cream in the house on a regular basis as opposed to just knowing I stock up on it only when there's room in my main freezer! <br />
<br />
Thinking about all of this made me question how the big commercial ice cream makers store their ice cream. After all, once it's produced in frozen form it has to stored at the right temperature whilst awaiting distribution and also during transit to the final destination of supermarkets and stores. In reading up on the subject I came across an interesting article by a <a href="http://www.frimatecuk.com/cold-rooms/" target="_blank">cold rooms</a> specialist who listed in their case studies the story of how they had been involved in the construction of one of the biggest industrial panel structures ever built in the UK - a fully automated freezer warehouse where Unilever's logistics people store/transfer <a href="http://en.wikipedia.org/wiki/Pallet" target="_blank">pallets</a> of ice cream.<br />

The size of the UK freezer warehouse build was massive at over 100 metres wide and 300 metres long, measuring up to over 1million m3 in total. Imagine how many pallets of ice cream you could get in there! Fruit ice cream flavors are further down the list with strawberry at the top followed by banana. Other fruits are less popular and that's probably because most of them make better sorbets than traditional creamy ice cream (or gelato). <br />

Juicy fruits are wonderful of course in their own right and my favorite is a classic, simple fresh fruit cocktail with apple, pear, pineapple and nectarine. So when I read a news item announcing a fruit that I've never heard of before, it grabs my immediate attention. This week I came across just such a new fruit - the <a href="http://en.wikipedia.org/wiki/Yuzu" target="_blank">Yuzu</a>. <br />

Regarded by some (apparently) as the world's sexiest fruit and favored by many top chefs in their cuisine, the yuzu is a citrus fruit that originates from East Asia. It looks like a small grapefruit and tastes a little like one with a hint of mandarin and lemon. The good thing about the yuzu is that one piece of the fruit has 3 times more vitamin C than a standard lemon. Popular in East Asia for a long time, yuzu is set to become much more commonplace on Western restaurant menus and as a flavoring in foods on supermarket shelves. So what about yuzu ice cream? <br />

Well, I haven't as yet made some but when I do I will probably use my simple orange sorbet recipe as a guideline - ie:<br />
<br />
a) make a sugar syrup from water, sugar and zest<br />
b) when thoroughly chilled, add to it the yuzu juice<br />
c) transfer to the ice cream maker for churning/freezing<br />

Waffles - In many countries they serve hot waffles with cream and chocolate sauce or preserves or honey. My husband will not consider a waffle a treat, however, unless it comes with ice cream! So much so that he brought back with him ideas about ice cream making and wrote down what is believed to be the first, definitive ice cream recipe in the USA.<br /><br />During my travels to <a href="http://wikitravel.org/en/France" target="_blank">France</a> I have come across many fabulous 'artisan' ice creams. In France a master ice cream maker is called an <a href="http://www.ice-cream-recipes.com/artisanglacier.htm" target="_blank">artisan glacier</a> - a much respected title and when you see and taste their ice cream it's not surprising why!<br />

It's not just the taste and texture of French ice cream that's great, it's how it looks. The French love to present their food in colorful and stylish ways and ice cream is no exception to that general rule. Here is a creme brulee ice cream I came across in a French ice cream parlor, presented with nothing less than a full creme brulee dessert on top!<br />

I developed my own creme brulee ice cream recipe and I have to say it is truly one of my favorites. Creamy and rich with a succulent vanilla taste it's fab on its own or served with a hot dessert such as crumble or sweet apple pie. On the subject of what you can serve your ice cream with, that's another thing the French are great at conjuring up .... a hot crepe or waffle is simply sumptuous smothered in ice cream and chantilly (not forgetting the chocolate sauce!).<br />
