Red Velvet & White Chocolate Ice Cream
In a recent post on my Ice Cream Recipes Facebook page I featured this fab photo sent to me by my friend Pat from sunny Cyprus.
I asked readers to guess the ice cream flavours. Oh what fun it was! The response to the post was amazing and people made all kinds of suggestions. Some guesses were very close and a few were a little .. er ... let's say 'imaginative' :)
One ice cream enthusiast suggested beetroot and onions! Another, bacon and chicken! After 5 days of guessing, it was Louise McInnes from Scotland who got it right. Her first post guessed Red Velvet for the top scoop and her second post guessed White Chocolate for the bottom scoop. She was spot on!
If you want to make your own homemade versions of these ice cream flavours here are my recipes.
Step 1 - Make a rich custard base using:
1/2 pint (250ml) chilled whole milk
4 egg yolks
4 oz (100g) sugar or caster sugar
1/2 pint (250ml) chilled, double/heavy cream
8 oz (200g) Red Velvet cake (crumbled and chilled)

Red Velvet Cake Ice Cream Recipe
NOTE: My recipe is for a rich and creamy ice cream with crumbled real Red Velvet cake added. The recipe is very similar to my Christmas Pudding ice cream.Step 1 - Make a rich custard base using:
1/2 pint (250ml) chilled whole milk
4 egg yolks
4 oz (100g) sugar or caster sugar
- Heat the milk slowly in a saucepan. Bring it up to boiling point but do not boil.
- In a separate bowl, mix the egg yolks with the sugar. Beat until smooth then pour the hot milk into it and stir it well. Pour the mixture into the saucepan and heat it gently.
- Keep stirring whilst it slowly heats up and thickens. When it looks and feels like custard take the pan off the heat and leave it to cool down. This will take 1-2 hours. Chill in the refrigerator for 2-3 hours or overnight.
1/2 pint (250ml) chilled, double/heavy cream
8 oz (200g) Red Velvet cake (crumbled and chilled)
- Stir the double/heavy cream into the chilled custard base.
- Add the crumbled Red Velvet cake, gently stirring it in well.
- Transfer the mixture into your ice cream maker and freeze according to the manufacturer's instructions.
White Chocolate Ice Cream Recipe
