Ice Cream Sandwich - Bubblegum & Banana

Large, chunky chocolate chip cookies with 2 scoops of delicious ice cream wedged in between and all topped off with sugared, whipped cream and hot chocolate sauce. Ice cream sandwiches don't get much better than this!

The ice cream flavors in this sandwich were bubblegum and banana. Ideal for kids but personally I prefer straight chocolate and vanilla ice cream. Old fashioned? Maybe, but oh so good!

Valentine Ice Cream Sandwich

This has to be the most romantic ice cream sandwich you will ever see!

My friend Barbara Goodman is a professional cook and bakes all the cakes, cookies and pastries for her family-run coffee shop business. Barbara knows of my love of ice cream making and came up with this little ditty for Valentine's Day - just for me and my ice cream recipes readership.

What makes this Valentine ice cream sandwich special is that it is, in fact, 2 ice cream sandwiches. Why? Well, if you look closely at the message on the pink fondant icing you will see why. After all, Valentine's Day is for couples so no good just having 1 ice cream sandwich!

Homemade all butter shortbread cookies
Fondant icing
Raspberry ripple ice cream

Halloween Ice Cream Sandwich

Halloween is always a great excuse for a family get together or night out with friends and it's especially fun for children. Halloween is therefore one of my 'ice cream special days' and it's for such days that I am always keen to try and come up with new, ice cream related ideas.

One such idea came to me a while ago ... a spooky Halloween ice cream sandwich! I was discussing this with some friends recently who run a super little coffee shop close to Hadrian's Wall and, as they specialise in baking unusual homemade cakes and cookies including some fabulous chocolate cookies with spider's web icing, I suggested they try making up an ice cream sandwich using these with mint choc chip ice cream sandwiched between them. Guess what? They did it and yesterday I filmed it in their coffee shop. Here it is, freshly made ... complete with plastic, non-edible spiders! Notice the super, orange Halloween decorations behind - nice touch Emma :-)
